I have a favorite recipe that I use for our chicken Tortilla soup but this time I went off the recipe and y’all this was the best pot of chicken Tortilla soup I have made!
The contenders!
1 whole roasted lemon pepper chicken (remove chicken from the bone)
1 can of chicken broth
1 small container of half and half
1 tbsp garlic
2 tsp Ground Cumin
1 cup of mild salsa
1 packet of fajita seasoning
3 tbsp butter
Tortilla chips
fresh cilantro
Mild cheddar
2 tbsp flour
1 tbsp onion powder
Over medium heat sauté your garlic, onion powder, and butter for 3-5 minutes. Add flour and stir until well mixed. Add the chicken broth and half and half. Bring to a boil and continue to stir. Turn on low. Add your salsa, chicken, cumin, fajita seasoning and fresh cilantro. If it’s too thick for your liking, add 1 cup of water. Stir and continue to heat for 15 minutes.
Once heated through, add to a bowl with tortilla chips and cheese. You can also add fresh avocado on top. Enjoy!
