Meatball Throwdown

I have a spare moment with all three kids in bed. While I have it, I am going to blog about these great Italian meatballs. I was watching Rachael Ray’s new daytime talk show when I was recovering from surgery a few weeks back and she had two ladies from a show called Real Housewives of New Jersey on there competing for the best homemade meatballs. I have only seen one episode of the Real Housewives of New Jersey and I guess it was the season finale. Anyway, I remember the one girl, who’s name was Theresa Giudice, was very Italian. She even had the Italian temper and threw over a table in anger. So when I saw her on the Rachel Ray show making her meatballs I knew they would be something I had to try. Guess what, I was so right. These babies are so delicious. This is a recipe you are going to want to have in your recipe box. Seriously, never had meatballs so good! So, I am going to post the link to the meatballs for you to print and I am going to post some pictures I took while I was making them. I, as usual, did not follow the recipe exactly so I will tell you what worked for me. Oh, one more thing, my son hates ground beef. He spits it out every time- if I can get him to take one bite of it. Guess who ate two whole meatballs for dinner! He LOVES these things. How could you not. Once you try these out for yourself you will understand what I am talking about.


Here is what didn’t work for me in the ingredients:

Calls for:
6 tbs of Romano cheese
I used:
6 tbs of Parmesan
Two reasons: I couldn’t find it in Walmart and I had Parmesan sitting in the fridge waiting to be used.

Calls for:
Garlic cloves
I used:
Minced from jar. I don’t have time to fiddle with that stuff so I keep a huge container in my fridge and I used 2 large spoonfuls.

Calls for:
Fresh Parsley
I used:
Parsley in a container from the seasoning aisle.

Calls for:
1 dried red pepper
I used:
Half of a bell pepper. It’s what I had on hand.

Calls for:
Seasoned bread crumbs
I used:
Italian bread crumbs. It’s all I could find

So, here are my meatballs ready to go into the oven. Only there is something wrong with this picture. I have them on a cookie sheet. I was so tired that I put my meatballs on a cookie sheet and threw them in the oven- bad idea. I realized it after a few minutes when I checked on them. I had to move them from the cookie sheet to a baking sheet.  Don’t make the same mistake I did.

Here is my minced garlic, bell pepper and onion cooking away. By now the meatballs were smelling up my kitchen. The kids came in there to find out what I was making because it smelled so good. Around this time it got a little crazy. Thing 3 started screaming for a bottle, Thing 1 and Thing 2 were complaining because they were hungry (btw it’s only 4pm) my phone starts ringing- you know, all at the same time. So, I bucked up, grabbed a bottle and warmed it, threw the can of crush tomatoes in there, checked the timer for the meatballs and began addressing one meltdown and one child at a time while I let the stove do the work for me.

When these came out of the oven it was all I could to hold myself back from eating them right then. Both kids came back  in the kitchen to check on my progress. Saw these. Smelled these. Wanted to eat these, right then.

Alas, they still had to simmer for half an hour in the sauce. So I threw them in there and got my pasta going.

Finally it was time to dig in. We LOVED them. Having someone over for dinner and don’t have time to really do it up? Serve these with spaghetti, some bread and a salad.  Seriously, these are “entertaining worthy” meatballs and sauce. They are so good they could hold their own with just the sauce and no pasta. Trust me and try them!
