I have been looking for a good cheesy rice recipe. Back in the day, my papa used to throw some cheddar slices on the rice and melt them. While I liked that, I also like my rice a little creamy. This recipe hit the spot for the man and I will probably change it to be all cheddar next time- just to make sure that it’s perfect 🙂
1/2 an onion (or use onion powder)
1 tbs minced garlic
salt to taste
1 cup rice
1 cup chicken broth
1 cup water
1 cup heavy cream
2 hand fulls of cheddar cheese
1 hand full of mozzarella cheese
Heat oven to 350.
Grease your baking dish (I use butter).
Melt about a Tbs of butter in a skillet, add onion and garlic and cook until translucent. Add salt, pepper, and rice. Stir so that rice is coated in butter and add broth, water and cream. Bring to a simmer. Place it in your greased baking dish. Cover and cook for about 30 minutes or until most of the liquid has been absorbed. Sprinkled the mozzarella cheese on top and cook until melted- about 10 minutes.
If I had had enough cheddar when I made this, I would not have used the mozzarella. Turns out the man LOVED it. Me, I would have been happy with all cheddar 🙂
