Y’all know how much I love my crock pot. You know I love Slow Cooker Fridays. When I can’t come up with a slow cooker recipe, I go to Stephanie O’Dea. She has the BEST slow cooker recipe site out there. I’ve sung her praises before and I will continue to because it’s beyond me how to she was able to cook with a slow cooker every day for one year. Glad she did though because that gives me a lot of recipes to choose from 🙂 Here is her website A Year of Slow Cooking. She also has a cook book if you want to check it out.
I have already used her twice this week for inspiration. For now, I am only going to give you the recipe for the Rotisserie chicken. I will do the other recipe another day!
Rotisserie- Style Chicken
Adapted from Stephanie O’Dea A Year of Slow Cooking
What you need:
3 boneless skinless chicken breasts
half of an onion
1/2 tsp paprika
1/2 tsp onion powder
1/4 tsp thyme
1/2 tsp Italian seasoning
1 tbsp garlic powder
salt and pepper to taste
Mix your spices and rub on the front and back of the chicken breasts. Place the onion at the bottom of your pot and put your chicken on top.
Turn it to low and let it go.
The Man loved it. He wanted to know what was on it. The Things loved it. They ate. All. their food. No complaints. I served this with roasted broccoli and vegetable rice. This is a great Friday meal or Sunday meal. No fuss and good!
